What to do in Ireland?

My wife and I just found that, finally, we are admitted into the study abroad program. We can now spend next semester in Ireland! Unfortunately, this might very likely set us back a semester in our schooling due to (lack of) class availability. Our other option is to stay where we are, and visit Ireland on our own in the spring. We want to immerse ourselves in the culture, and like the aspect that a study abroad program allows us to jump right into "everyday life" instead of a vacation.
As we're looking at our options, how do we do the same thing if we travel on our own? We don't want to do touristy things, but are drawing a blank on other options at the moment. (I'm sure we're over-thinking it right now.)

How about trying a career you've always wanted to try? I think Tim's mentioned test driving careers on occasion in his blog. That might add a bit of spice to your relocation, and if you want to still go and see some touristy things (hey, who doesn't, isn't that half the attraction?) then make sure it's a part time gig

Didn't see that you replied, sorry for the delay.

We'll be there for school, so the career stuff is covered by classes/homework, I think. As students, I don't think we're allowed to get jobs (not that I want one anyway, I want a muse up and running!) since we won't be there the full year.

Just noticed that there is a castle in the town we'll be staying in. It might be touristy, but hey, it's a castle!

Now we just need to find a place to stay.
