Hey guys....
I am looking to put all my products up on ebay within the week....Please help! I am stuck because I don't know what to put for sales tax on ebay, i know I charge NYS people cause I am from NY but do I also charge from where it ships? and what is the rate because ebay allows 1 rate to be entered and NYS charges a different rate for each county....

It's 8.375% for NY residents.
And ebay does have a place on the auction form to fill that in.
That's one of the banes of online stores. As it sits, tax does not need to be charged for online transactions (interstate) anyplace that the online business/business does not have a physical location. That's why Amazon doesn't charge sales tax, and Barnes and Noble does....most states have a B&N store in them, somewhere.
The US Supreme Court's decision basically ruled that if the item was being shipped to a different state, then sales tax wasn't applicable, since the recipient was responsible for paying their home state a use-tax on the item they bought.
As the exception proves the rule, there are states that require some companies to charge sales tax for all sales made within that state...California / Amazon being one example.
In Arizona, different cities and counties have different rates, too, added to the state sales-tax rate. The generally accepted prinicple that I follow is to charge my city's tax rate for all sales made within the state. Technically, I could probably get away with charging only the state/county sales tax for sales made outside my city limits, but the hassles involved in doing so do not outweigh the miniscule difference I would save.
