Does anybody have tips or strategies for AdWords keyword pricing?

I have run several campaigns and even with a $2-3 cpc my ads stop showing (I get <1000 impressions a day). I feel like I must be doing something wrong or maybe my estimate of what a cpc rate is too low (I feel like the book talked about aiming for $0.50).

Any help is greatly appreciated.

I'm new to this as well, but it seems that there could be several things.

I would recommend going to Keyword Sandbox on Google and finding the groups that have low competitor advertising as well, but are frequently searched for.

That way, you will consistently show up as a top advertiser (because of lack of competition).

Also, if you have lower CPC, you should be able to test several ads, then keep refining until the best one (or one of them at all) sticks. Maybe i'm misunderstanding you, but are you using several different ads for the same product, or several ad campaigns for different products?

Finally, one more question. Are you systematic in your copy (using a particular keyword, for example) so that you can track what is having the best effect?

Yes, restrict that CPC to .50 or less, as long as your ad is showing on the first page (first 7 or so, IMO) you're getting a good position. Please read "Muse Math" in the reader-only section of http://fourhourworkweek.com/ - it's gold :)
